This week I was out of town and came down with a cold so Ryan made these breakfast sandwiches. Short and simple today!
I made curry the night before for dinner with sweet potatoes from Gachi and store-bought carrots and a yellow bell pepper. I fried the veggies and then simmered them in a Korean packaged curry sauce. We had a lot left over so in the morning Ryan made breakfast sandwiches. We just toasted a few slices of bread, fried up an egg, and topped with the curry sauce and veggies. Curry breakfast sandwiches – easy and yummy.
